Sauternes

Sauternes is a sweet and well balanced wine made primarily from the Semillon grape blended with Sauvignon Blanc and Muscadelle. The grapes undergo a change from developing botrytis cinerea (noble rot) which shrivels the grapes, concentrating the sugar and flavor, resulting in notes of honey and nectar. One of the finest Sauternes is Chateau d Yquem.
